Blueberry Banana Bread – moist and low in fat!

Blueberries and banana combine so well together in this delicious, super moist bread made with lots of very ripe sweet bananas which allow you to cut back on the fat without sacrificing the flavor and texture. This is perfect for breakfast or snack and can also be made as muffins if you prefer.

I don't know why it took me so long to add blueberries to my banana bread, it's a delicious combination I'll be doing more often. We love banana bread in my house, Madison especially loves when I make it so she can have it for breakfast or snack in school. I have several varieties, Banana Nut Bread, Chocolate Chip Banana Petite Loaves, Roasted Strawberry Banana Bread and a Gluten Free Banana Bread.

Baked Eggs in Spaghetti Squash Nests

You're going to LOVE these baked eggs, baked in a nest of spaghetti squash which has a flavor similar to hash browns. Perfect for breakfast or brunch, and because I love my eggs with sriracha, I top mine with a few dashes just for an extra kick, totally optional of course.

This recipe calls for cooked spaghetti squash which you can either roast in the oven cut side down in a baking dish at 375°F for 1 hour, or the quicker way is to pierce it all over with a fork, then microwave until the skin is soft, about 2 to 3 minutes per pound.  Remove the seeds and scrape the strands with a fork. Because I had the time, I did this on the oven.

Bell Pepper and Potato Frittata

Egg frittatas are EASY and inexpensive – perfect for breakfast, lunch or dinner! This St Patricks Day Frittata is made with yukon Gold potatoes and bell peppers to create shamrocks!

Egg frittatas are my answer to an easy, inexpensive meal solution whether I'm having it for breakfast, lunch or dinner. For breakfast, I'll serve this with a side of berries or fruit. For dinner, I make a salad on the side and call it a meal!

You can literally throw anything into a frittata and call it a meal, but I thought it would be fun to make this one a St Patricks Day theme which of coarse MUST have yukon gold potatoes, and to create a shamrock design, I sliced my bell peppers into flower shapes – completely optional! This one's vegetarian, perfect if you need a meatless Monday dish idea, and it's naturally gluten-free.


I'm not sure if there's anything quite as beautiful as farm fresh eggs. A friend of mine is raising chickens in her yard and gave me some of her eggs and the colors were so beautiful I almost didn't want to crack them. The yolks are so orange, it's hard to believe I made this frittata with half egg whites.

Petite Crust-less Quiche


Loaded with turkey kielbasa, veggies and cheese, this slimmed down quiche will not dissapoint.

I like to make these on weekends, and reheat leftovers for the week. I usually refrigerate them for up to 3 days or freeze them to reheat at a later time.

You can swap the veggies for anything you like, and the kielbasa can be swapped with ham or sausage. Two muffin sized quiches are perfectly satisfying, and to be honest, who needs the crust? If you try, let me know what you think!

Making your own turkey sausage patties from scratch is easy –  and bonus, no processed ingredients! I'm so honored to have my friend Jackie share this recipe here on Skinnytaste as a guest post. I am excited to be here on Skinnytaste again. A lot has happened since my last guest post. This past summer I was offered the opportunity of a lifetime (or at least my lifetime) to work as a test kitchen contributor at Bon Appétit Magazine. I interned there after completing culinary school last year but it was quite a different and incredible experience to actually contribute to the magazine and website.

After working at Bon Appétit for 8 months I am happy to be back home with the kids and focus on developing recipes on a freelance professional basis as well as for my website. In addition to gaining a ton of experience while working in the test kitchen, I gained a few pounds. Occupational hazard, I suppose. I decided to re-join weight watchers and work on creating and maintaining healthy eating habits once again.

I used weight watchers after the last 2 of my 3 sons were born and it is my favorite weight loss program. The balanced approach is not only physically healthy but I’ve found it to be the best for my long-term success. Once I started calculating points for all of my recipes, I immediately thought of Gina and of course all of you here at Skinnytaste. I am looking forward to visiting here from time to time and sharing my healthy recipes with you. I hope you will stop by my page to say hi to me there as well.

Today’s recipe is for Turkey Sausage Patties. They are extremely flavorful and savory. You could serve them for breakfast with eggs or even for lunch and dinner. I soften the onion and garlic and then toast some fennel with the mix to add a depth of flavor you wouldn’t get by just adding everything raw It’s a short extra step that is definitely worth taking.

Avocado Toast Egg-in-a-Hole


The perfect 5 minute breakfast to make the one you love! Whole grain toast with mashed avocado, eggs over easy and a few dashes of hot sauce – 5 ingredients, 5 minutes to make, doesn't get better than that!


I'm obsessed with avocado toast and eggs lately as you might have noticed! I was thinking about Valentine's Day breakfast ideas and forgot I had these heart shaped cutters, so immediately this came to mind. I bought heart shaped cutters on Amazon last year, but even if you don't have fancy cutters, you can keep it simple and use the rim of a glass to cut out a hole.

This is MY kind of egg sandwich! Whole grain toast with mashed avocado, a runny egg and a few dashes of hot sauce – only 5 ingredients, 5 minutes to make, doesn't get better than that!

I'm not much of a breakfast person, most mornings I usually grab a cup of coffee, a hard boiled egg and a piece of fruit, or whip up a smoothie. But lately, I've been obsessed with avocado toast for breakfast, especially when I have avocados in my fridge that need to be used up.

Poached Pears with Yogurt


These poached pears are simple and wonderful, whether you want to serve them for breakfast or dessert.

I gently poached them in a combination of apple and pomegranate juice along with a cinnamon stick and an orange rind. No additional sugar needed  – so easy and delicious!


My aunt recently had to stop eating dairy for health reasons, so when Silk approached me about their new dairy-free yogurt alternative I was excited to try it. My Aunt was super excited because she wasn't happy with the flavor and texture of two other brands she tried (Trader Joe's and Stonyfield's). I bought them all as well to do a taste comparison and hand down, Silk Dairy Free Yogurt Alternative had the best flavor and texture, it's delicious!


This recipe is also naturally gluten-free, vegan and vegetarian. These best part about these pears is that the can be made a few days in advance, and kept refrigerated until ready to eat.

Healthy Avocado Egg Salad and Salmon Sandwich

An open-faced egg salad sandwich with wild Nova salmon and cucumber slices – under 300 calories, protein packed, and loaded with good fats.

Easiest tip to make a sandwich lighter is to make it open-faced. To make a lighter egg salad, I use half the yolks so I am still getting the health benefits from using some of the yolks, plus I add some mashed avocado which makes it creamy and full of healthy fats.

This is great for breakfast or lunch. If you're only making one serving, you can refrigerate the egg salad in an airtight container. Enjoy!

Sausage, Cheese and Veggie Egg Bake


Eggs baked with sweet Italian chicken sausage, broccoli, roasted peppers and mozzarella cheese. I love the convenience of making a large breakfast casserole when I have friends and family over for breakfast or brunch. I also set out some fruit, a yogurt bar, coffee and juice. You can use any combination of vegetables to make this casserole, but I love how the broccoli and roasted peppers mimic the festive Christmas colors.


I worked with Ziploc® to create a sponsored post sharing a recipe, their containers and some "life lessons". I thought I would share a few things I learned from all of YOU blogging these past few years.

One of the things I love about blogging is that I really got a chance to learn what's important to you. Your comments and feedback only make me a better recipe developer and blogger. Last year I shared this recipe for a Ham and cheese breakfast casserole, and one of the questions everyone asked was if it could be assembled in advance.

So Lesson # 1 - this year I kept that in mind and prepped all of my ingredients and even cooked the sausage in advance so all I had to do in the morning was a quick saute while the oven heated up and into the oven it went.


I used Ziploc®'s Holiday Storage Bags for all my prepped ingredients and kept them in the refrigerator so in the morning I can just toss them out – no extra dishes to wash.


Lesson # 2 – I learned through the years some of you hate mushrooms, or cheese, or maybe even sausage! So here's the deal.... you can use whatever you want here!! Swap mozzarella for Swiss cheese, Feta, cheddar OR leave it out. Swap mushrooms for asparagus, or swap sausage for ham. There are no rules, use what YOU like.

Lesson # 3 – Several of you will always ask me if you can use egg beaters – my answer is yes. I personally prefer to use whole eggs with a few egg whites to lighten it up a bit. Too many egg whites I learned gives me a spongy texture, so finding the right balance of whole eggs to egg whites is crucial, plus the yolk is good for you so don't forget that!


Lesson # 4 - One of the questions I get the most from people is if a dish can be frozen and how. Here's what I do – I cut the leftovers in portions and freeze them. This way whenever I need breakfast in a hurry, I reheat them and know exactly what my portions are. These Ziploc® Containers with One Press Seal come in all sizes and stack easily in the freezer to save space. To reheat simply thaw the night before or you can heat it up in the microwave or oven set to 350°F until heated through.

Leftover Turkey and Sweet Potato Frittata

Frittatas are a great way to use up leftovers!

Leftover turkey, sweet potatoes, spinach and Gruyere cheese – trust me, you'll want to save some leftover turkey from Thanksgiving because this breakfast frittata is SOO good!


When I had the idea of using leftover turkey and sweet potato in a fritatta, I had no idea just how good this would turn out! In fact, I would make turkey again, just to make this frittata. Frittatas are so versatile, you could of course use leftover chicken breast instead, or swap the Gruyere for another cheese, the spinach for kale, etc. This is naturally gluten-free, and can be eaten for breakfast, lunch or dinner with a salad on the side. Gluten-Free Lightened Up Banana Nut Bread

This banana bread is moist and delicious, you can't tell it's light or gluten-free!

Low-fat, gluten-free banana nut bread made two-ways! My family went bananas for this!!

My aunt recently started following a gluten-free diet, and my close friend has Celiac, so lately I've been dabbling more with gluten-free baking. I had a large bunch of over-ripe bananas sitting on my counter and decided to experiment taking my favorite Low-fat Banana Nut Bread Recipe and making it gluten-free. Since the recipe makes two loafs (yes you can halve it if you wish) I thought why not use two different gluten-free flours to see which yields the best results. Not having a ton of experience baking gluten-free, and seeing how much fat is usually used in gluten-free baked goods, I wasn't sure how this would turn out, but the results were EXCELLENT!


This was easier than I thought it would be, I was fully prepared to test this a few times but it worked on the first shot, and they were both equally delicious. The bread on the above left photo was made with brown rice flour instead of wheat flour; the bread on the above right photo I swapped the wheat flour for Bob's Red Mill Gluten-Free All Purpose Flour.

I then had my aunt, friends, daughter and husband help me taste test them to see which was better and the results were mixed. My favorite was the Bob's Red Mill, to me it tasted closest to my original recipe. But some of my friends liked the brown rice one better because they liked that it had a cakier texture, something that is difficult to achieve with gluten-free baking. My 4-year old daughter loved them both! So I'll let you decide which way you want to make it, and if you want the original wheat version, here's the link. I gave you the nutritional info for both, with and without the nuts!

Ingredients:

    • 7 ripe medium bananas, mashed
    • 1/2 cup unsweetened apple sauce
    • 2-1/2 cups Bob's Red Mill gluten free flour (all purpose or brown rice)
    • 1-1/2 tsp baking soda
    • 1/2 tsp salt
    • 4 tbsp butter, softened
    • 1 cup light brown sugar (unpacked)
    • 4 large egg whites
    • 1 tsp vanilla extract
    • 3 oz (3/4 cup) chopped walnuts
    • baking spray



Directions:

Preheat oven to 350°F. Spray two 8x5 inch nonstick loaf pans with baking spray.

In a medium bowl, combine the flour, baking soda and salt with a wire whisk. Set aside.

In a large bowl cream butter and sugar with an electric mixer. Add egg whites, bananas, apple sauce and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture and walnuts (if using), then blend at low speed until combined. Do not over mix.

Pour batter into loaf pans and bake on the center rack for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes to bring it to room temperature before slicing.

Baked Pears with Walnuts and Honey

A simple, delcious Fall dessert.

Baked pears with cinnamon, honey and walnuts – it doesn't get simpler that this!


I had some beautiful ripe Royal Riviera pears on my counter from Harry & David and didn't want to waste them, so I cut them in half, cored them and baked them in the oven this morning. While they baked my kitchen smelled heavenly! They turned out even better than I hoped – I had one for breakfast with a little yogurt, but this would also make a wonderful dessert.

Maple Pecan Banana Muffins

Delicious, low-fat banana muffins sweetened with pure maple syrup and topped with crushed pecans.

This week has been a crazy week, for those of you who missed it I was on QVC Wednesday selling The Skinnytaste Cookbook!

I was a little nervous, but honestly David is such a great host, he made it so easy. After that I flew to Pittsburgh to visit the Delallo family (I will share more about that later this week) but it feels so good to be back home in the kitchen cooking and sharing recipes.

Madison, my youngest LOVES banana muffins, so whenever I have ripe bananas on my counter I always like to bake a batch for her. Whatever we don't eat that day is usually her breakfast the next day. In my house, these go pretty quick, but if you live alone, you can individually wrap them in plastic wrap and freeze them for a later day, then pop them in the microwave – they taste just like you first baked them.

These muffins are slightly adapted from my low fat banana nut bread recipe. Here I wanted to use pecans, pure maple syrup and some maple sugar I purchased, but if you don't have maple sugar any sugar would work. What I love about making these banana muffins is that they come out so moist, and I only use 2 tablespoons of butter in the whole batch!

Applesauce Nut Bread


Moist cinnamon apple bread made with homemade applesauce, small chunks of fresh apples and walnuts in every bite. It's so moist and delicious, you won't believe it's low fat!

I'm going apple picking tomorrow upstate New York and I am totally planning on making my crock pot applesauce and this awesome applesauce bread so I thought I would revive this from the archives for anyone else out there who might also be apple picking. The scent of cinnamon and apples baking in the oven all morning makes my kitchen smell like Fall.


You can also make this with store bought apple sauce, but it is so much better with homemade so if you have lots of apples, I highly recommend you do so. I've made this with and without the apple chunks, but I love the extra sweetness and moistness the chunks add to the bread, I highly recommend them. Be sure to dice them small so they cook through.

Summer Breakfast Quinoa Bowls

 

Of all the ways to eat quinoa, this is my favorite! Served as a warm cereal topped with fresh fruit and a drizzle of honey – it reminds me of eating a bowl of farina as a kid, memories I hold dear and near.


I cook the quinoa in almond milk sweetened with just a touch of brown sugar (you can use any sweetener or omit if you wish) and serve it with extra warmed milk on the side. That's just my preference, if you prefer your cereal thicker you can add less milk. Using almond milk makes this a great dairy-free, gluten-free breakfast option for people with allergies. 


And for a Fall inspired bowl of quinoa cereal, you can also try my Apples and cinnamon breakfast quinoa which is equally delicious!

Pina Banana Colada Smoothie


No time for breakfast? Make a smoothie! I love this combination of bananas and pineapple – a little taste of the tropics to start my morning.


Pineapples are rich in enzymes, which is great for your digestive system. It's also an excellent source of vitamin C. I like to throw in some chia seeds, but it's completely optional. Along with bananas, this smoothie is high in fiber, vitamins and a perfect start to your day!
