Shrimp Zoodles Parmesan for Two – an easy, healthy meal in under 30 minutes!

Baked Shrimp Parmesan over Zucchini Noodles – an easy, light and delicious shrimp dish made in under 30 minutes!

I love shrimp parmesan and make it often at home because it's so much healthier to make it yourself. Rather than frying the shrimp like you'd get from a restaurant, I bake them in the oven until golden.


I've had the idea of making shrimp parm over zucchini noodles for quite some time, so when I was approached by Tuttorosso to be a part of their Inspiralize the Spring campaign, I knew this was what I was going to make. I've been using Tuttorosso tomatoes for years – if you've been following me from the beginning, you probably already know that they're my crushed tomato of choice.

This recipe is simple, you'll want to have everything prepped and ready before you start making this, because it comes together fast.  Have your zucchini cut and ready before you start, I prefer a thicker zucchini noodle so I used the thicker noodle blade of my Paderno Spiralizer to cut my zoodles. Enjoy!

Spiralized Sweet Potato Latkes

 Spiralized Sweet Potato Latkes - a healthier sweet potato pancake!

Latkes – a healthier take on a traditional deep fried potato pancakes, these are lightly pan fried in a small amount of olive oil, made with sweet potatoes instead of white and made EASY by using a spiralizer because it eliminates the need to grate the potatoes, which can take a lot of time. With the spiralizer, it only takes minutes. Of course, if you don't have a spiralizer you can grate them with a box grater instead.


The question I get asked most often is what spiralizer I own. There are lots on the market which are fine, but I love my Paderno Spiral Vegetable Slicer because it's made well and it's easy to use and clean. I own the three-blade which is perfect for what I need.

The ingredients are simple: sweet potatoes, scallions, garlic and egg. I knew I wanted to lightly saute them in a pan with just a trace amount of oil and tried to see if they would hold without using flour and they worked out perfect, so they are kosher, gluten-free, and paleo-friendly. You'll want to make them and eat them right away, they are best when they are hot. These go perfect with Braised Brisket – enjoy!

Spiralized Apple and Cabbage Slaw

Spiralized Apple and Cabbage Slaw – a quick and easy side dish!


This beautiful apple and cabbage slaw is sweet, bright and crisp, the perfect side dish to any meal and great to bring to a potluck.

You don't need a spiralizer to make this, you can of course core and cut the apples into thin strips, but if you have one, use it because it's so much easier and quicker to do! No coring, and the seeds just pop out. II used the thicker blade on my Paderno Spiral Vegetable Slicer to make my apple zoodles, which are not just for zucchini!

I just remove the stems and place the thicker end in the little spokes for a better grip.  Then spiralize and quickly add the dressing so the apples don't brown (lemon juice works too).

Quick Spiralized Zucchini and Grape Tomatoes

Quick Spiralized Zucchini (Zoodles) and Grape Tomatoes


I think it was on an episode of MasterChef Junior that I heard the quote "what grows together, goes together" which makes so much sense. Zucchini, tomatoes and basil are just made for each other, you can serve as a side dish, as suggested, or even as a main dish topped with some grilled shrimp or chicken.



I've been using the thicker blade on my Paderno Spiral Vegetable Slicer to make my zoodles (zucchini noodles). I like the larger noodle because it has more of bite and I'm careful not to overcook them so they don't get soggy. Under two minutes is all they need, then I quickly remove them from the hot skillet or they will keep cooking.

Spiralized Shanghai Beef and Broccoli

Marinated sirloin steak with broccoli and spiralized broccoli noodles in a delicious hoisin sauce. This dish is out-of-this-world good, and so filling I couldn't even finish it! You NEED this in your life!

Here's the deal, you know those broccoli stems you usually throw out? Well you can spiralize them and use them in place of noodles in dishes like this easy Asian stir fry for a low-carb alternative to noodles. There's lots of spiralizers out there and I'm often asked which I use, I love my Paderno Spiralizer, it's the easiest way to make zucchini noodles, sweet potato spirals, carrot ribbons and more! If you don't have one you can also use a mandolin with a julienne blade, or buy a bag of broccoli slaw.

The trick to spiralizing broccoli stems is to find the thickest ones. At least 2-inches in diameter, and cut off any pieces sticking out. Then I used my potato peeler to smooth it out. I placed the thicker end of the stem into the spikes which I found was the key to success.


This recipe was inspired by a meal I had with Phillip Chiang, the man who started the wildly popular Chinese restaurant chain PF Chang's. I got to sample their Chinese New Year menu which they are serving right now and even got to go behind the scenes and watch them cook up some dishes. Hope you enjoy, happy spiralizing!

Spiralized Mediterranean Beet and Feta Skillet Bake

Beet noodles baked with tomatoes, red onion, olives and Feta. Serve this as an appetizer with some baked pita chips, as a side dish or even as a main dish, topped with grilled shrimp or chicken – this dish is a keeper!


I think most of you know I'm pretty obsessed with my spiralizer, (I LOVE my Paderno Spiral Vegetable Slicer) but my friend Ali is even more obsessed than me, if that's even possible. So obsessed, she devoted her entire blog to this gadget and just came out with a cookbook that you will need to get your hands on! The book is called Inspiralized: Turn Vegetables into Healthy, Creative, Satisfying Meals, and it's only 15.47 on Amazon! Tons of great spiralized ideas, everything from breakfast to dessert – the girl is a spiralizing genius!


I had a hard time deciding what to make first, but since I typically make spiralized zucchini and cucumber dishes with my spiralizer, so I chose a dish using beets instead. As a kid, I hated beets because I only tasted the pickled kind, that came in a jar. As an adult, I started enjoying them roasted in salads, and even discovered how delicious they are raw. Here, the beets are spiralized, tossed with vinegar, oil and herbs and roasted for 20 minutes. Once roasted, the beets are tender yet firm, exactly how I like my vegetables. If you're unsure about beets, I know this dish will convert you!

The only changes I made to her recipe was using less cheese, I cut the block in half horizontally and it was still more than plenty.

Chicken Zoodle "Lo Mein" For Two

A lighter Lo Mein using zucchini noodles in place of pasta – under 300 calories!

This faux lo mein dish is made with zoodles (zucchini noodles) in place of noodles and the results are DELISH (and bonus under 300 calories)! Each bowl is loaded with chicken and vegetables in a savory sauce. If you want to make this meatless, tofu would also be great in this dish. Start to finish this takes about 20 minutes to make... quicker than waiting for your take-out to get delivered!


To make the zoodles you can use a vegetable spiralizer such as the Paderno Spiral Vegetable Slicer or a mandolin fitted with a julienne blade although the spiralizer is so much easier and safer.


Since zucchini releases a lot of water as it cooks, I use it to my advantage and purposely leave the sauce a little thick. Once the noodles cook and release their liquid (I only cook them 2 minutes TOPS) the liquid from the zucchini thins the sauce and it comes out perfect.

Shrimp Scampi Zoodles for Two


Shrimp with lemon, lemon zest and garlic over zucchini noodles – this dish is EASY low-carb, gluten-free, paleo-friendly, very satisfying and took less than 20 minutes to make, start to finish and it was DELICIOUS!

2014 was certainly the year for the zoodles (zucchini noodles)! Ever since buying my FAVORITE cooking gadget, the Paderno Spiral Vegetable Slicer I was hooked! I've been swapping pasta for zucchini noodles ever since. It's the easiest way to make zucchini noodles, cucumber noodles, sweet potato spirals, spiralized beets and more! Prior to owning one, I used my mandolin but it's so much quicker and easier (and safer) with this fun gadget – you NEED one!!

I took a break from zoodles for a few months because I may have over-did it this summer, but now that it's January I dusted off my Paderno and have been making them all week.

If you are new to zucchini noodles, a few tips: don't cook the zucchini longer than 2 minutes or it will become watery. I usually cook it 1-1/2 minutes so they stay firm yet warm. You can even eat it raw, like in this awesome Raw Spiralized Zucchini Salad with Avocado and Edamame.


Zucchini noodles are also great in Asian dishes, try this Kung Pao Chicken Zoodles, under 300 calories!

Raw Spiralized Zucchini Noodles with Tomatoes and Pesto

I combined all of my favorite end-of-summer garden vegetables and created this simple, raw spiralized zucchini and pesto dish.

As much as I look forward to the Fall, I'm not quite ready for summer to be over. Having fresh herbs at my fingertips is what I'll miss the most, so I'm taking all my basil and making skinny pesto with it to freeze and use throughout the year.


I'm also going to miss eating zucchini 4 days a week, especially in a zoodle form... although I'm not putting my spiralizer away just yet!! I have lots of fun Fall recipes planned for it, so if you don't have one, you probably should run out and get one!! (btw, love my Paderno Spiral Vegetable Slicer - the easiest way to make zucchini noodles, sweet potato spirals, carrot ribbons and more!)


And let's not forget to mention summer tomatoes, this is the best time to eat them!!  One thing I should note if you're making this for one, I would make the whole batch of pesto, but only spiralize 1 small zucchini and add 1/4 of the pesto. This needs to be eaten right away, if it sits too long it will get watery.

Spiralized Greek Cucumber Salad with Lemon and Feta

Who needs lettuce? This Greek salad is fresh and crisp – the perfect, light summer salad!

This light cucumber Greek salad is the perfect meatless summer dish. Trust me, you're going to want to make this all summer long! Fresh cucumber, tomatoes, bell pepper, olives, red onion, oregano, lemon juice, olive oil, and fresh feta – it's filling, high in fiber and protein, perfect for lunch or dinner!


I had some fresh Feta leftover from my Lemon Feta Drumsticks, and I've been craving a good Greek Salad, but I wanted to make it without the lettuce and make cucumber the star of the show. This turned out better than I could have imagined! I used my favorite cooking gadget – my the Paderno Spiral Vegetable Slicer with the chipper blade to quickly whip this up into beautiful spirals and the results were a salad that's crunchy and bright, and not weighed down by a heavy dressing. This took me less than 10 minutes start to finish – win!

If you don't own a spiralizer you can just dice the cucumbers with knife and make it a chopped Greek salad instead. I highly recommend using a decent Feta cheese, not a fat free Feta.

Who needs lettuce? This Greek salad is fresh and crisp – the perfect, light summer salad!

A great Meatless Monday meal. If you are making this ahead for lunch for work, you can leave the lemon juice and olive oil out, and pack it on the side, then just add it when you're ready to eat. Enjoy!

Zucchini Noodles (Zoodles) with Lemon-Garlic Spicy Shrimp


Spicy shrimp with garlic, zucchini noodles, tomatoes and a squeeze of lemon juice – I just inhaled this EASY low-carb, gluten-free, paleo-friendly dish for lunch which took less than 20 minutes to make, start to finish and it was DELICIOUS!

Today it's finally starting to feel like Spring! Before you know it, summer will be here and you know what that means.... bathing suit season! I've been diligent about working out a few times a week, but you know what they say – great abs start in the kitchen and this so true so now that winter is over, I've been cutting back on my carbs (not eliminating, don't worry!) and really making my calories count.
