Madison is off from school this week so I'm trying to spend less time working and more time doing family stuff. This is in my slow cooker today so I thought it would be perfect to share here from the archives.

I'm not a fan of sweet foods as a main dish, unless it's balanced with savory and spicy flavors. In this dish the honey, soy sauce, rice vinegar and sriracha compliment each other and balance out the sweetness.

I've tried a few versions floating around the web, but they were much too sweet for my taste. After a few attempts, I finally found the perfect balance of sweet-savory without adding too much sugar. Rice wine is naturally sweet, and adds a bit of acid which rounds out the flavors. I served this with more sriracha sauce on the side for extra heat and served it over brown rice.

I usually set some chicken aside for my toddler when I shred it, before adding it back to the sauce, since her palate is pickier than the rest of ours, and it works out fine. I never cook a separate meal for her, she eats what we eat, just modified at times if I cook something spicy.

For lunch the next day, I made some lettuce wraps with some leftover forbidden rice I had and thoroughly enjoyed eating them with my hands.

Crock Pot Corned Beef and Cabbage


Since tomorrow is St Patrick's Day, and I'm sure many of you will be enjoying this classic Irish-American dish, I am sharing this from the archives! This is what we'll be eating for dinner tomorrow and I can't wait! I used frozen pearl onions and I used parsnips instead of potatoes to make this easy pea-sy and the results were great!


Making it in the crock pot is the perfect solution for a busy schedule. Trim all the fat off to keep it lean. I purchased a 2 1/2 lb piece or corned beef brisket, after I trimmed all the fat off it was 2 lbs. Once cooked it shrunk to 18 oz. 

This was my second attempt at this dish in the slow cooker, my first version I put everything in the pot and turned it on. This resulted in overcooked cabbage that turned to mush. Second time around I added the cabbage at the end and it was perfect! I like to serve this with a side if Cauliflower Mash or Buttermilk Mashed Potatoes and a little mustard or horseradish cream on the side. How do you enjoy your corned beef?

Slow Cooker Lemon Feta Chicken Drumsticks

EASY crock pot chicken – ONLY 5 ingredients!

EASY chicken dish – only 5 ingredients not counting s + p! Skinless chicken drumsticks are seasoned with lemon, oregano and spices then slow cooked in the crock pot. When done, they are topped with fresh grated feta – YUM!

Every now and then I like to take recipes I would normally make in the oven and try them out in my slow cooker. Some of you might recognize this Roasted Lemon Feta Chicken recipe from the archives. Often they convert great for the slow cooker with some slight modifications. These drumsticks were fall of the bone, with great flavor and the only difference was rather than adding the feta and broiling them in the oven, I served the chicken on a platter and added the fresh grated feta cheese after which melted from the heat of the drumsticks. I highly recommend buying a chunk of feta and grating it yourself, it's moister and tastes so much better. I served this with this massaged raw kale salad using feta instead of parmesan – an easy inexpensive meal.

Slow Cooker Moroccan Chickpea and Turkey Stew


Ground turkey and chickpeas are slow cooked with turmeric, paprika, coriander and lots of vegetables for a cozy dish that only gets better with time – so leftovers make a delicious lunch. This is also freezer friendly and naturally gluten-free.

It's so strange how addicted I am to chickpeas these days – a legume I once stayed far away from. Now I can' get enough of them, and since they are high in protein, fiber, vitamins and minerals, I'm glad I've learned to love them. One bowl is very satisfying, and it has a touch of spice. If you prefer to keep it mild, you can leave out the red pepper flakes.

Crock Pot Maple Dijon Chicken Drumsticks

An EASY chicken dish the whole family will LOVE!

This is an EASY slow cooker chicken dish made with only 6 ingredients, including the salt and pepper! Kid-friendly and delicious – the chicken literally falls off the bone!


It's great having friends who love to cook. I get the best ideas from them, and this recipe is the perfect example. My girlfriend Nalini is an excellent cook, and she was telling me about this chicken recipe she made in the oven for her family. Me of course changed the recipe (I just can't help myself) I removed the skin from the drumsticks, modified the ingredients and adapted the recipe for my slow cooker. Results – AMAZING! Kids, husband, everyone loved it!! I served this with Shredded Brussels Sprouts with Proscuitto from The Skinnytaste Cookbook (which my 4 year old loves) and everyone was happy.

Crock Pot Sazon Pork Chops with Peppers, Olives and Potato

Seasoned with Latin spices and slow cooked in a flavorful sauce!

These pork chops are seasoned with Latin spices and slow cooked in a flavorful sauce with tomatoes, olives, peppers and potatoes. They literally fall of the bone when they come out of the slow cooker!
I love to serve them with just a little brown rice on the side, but totally optional!


My house was a little divided on this recipe. My husband thought it was good but not great, but my oldest daughter Karina thought it was AMAZING as she put it. I really liked this a lot too, and it was my first time making pork chops in the slow cooker believe it or not but won't be my last.

I weighed the pork off the bone and got 4 oz cooked, so that is how I calculated these since they are not always the same size and the bones vary in size. If you go with boneless chops, that about 5 oz raw for each one.

Crock Pot Minestrone Soup

By far the BEST Minestrone soup recipe you'll ever try!

This is by far the best recipe you'll ever try for Minestrone soup – a classic, hearty Italian soup with tomatoes, white beans, vegetables and pasta. You can use Swiss chard or baby kale instead of spinach if you wish and you can omit the pasta if you don't want the carbs – honestly you won't miss it with everything else in this soup.

It's just my preference, but I like to puree the beans in this soup, it thickens it and you don't even know they are in there (great for picky eaters). What makes this soup extra special, is using the rind from a wedge of parmesan or Romano cheese. I always stash them in my freezer just for soups, if you don't have one toss some grated cheese into the soup while it's cooking.

This is an old recipe I've been making for a very long time! Originally I shared this as a slow cooker recipe in 2009, which is super convenient when you are working all day and want to come home to a cooked meal. But I also love making this on the stove, so I've updated the directions for both crock pot AND stove top.

This is also great with mini turkey meatballs, or even some sauteed crumbled turkey sausage. To keep the pasta al dente, I cook the pasta separate and add it to each bowl when I serve it, rather than throwing it in the soup which winds up soaking up all the broth.

Chicken Ropa Vieja


This Cuban inspired dish is made with shredded chicken breast cooked in the crock pot, then sauteed with bell peppers, onions, cumin and lots of Latin flavor!

Cuban cuisine is a favorite of mine and Ropa Vieja, which translates as "old clothes" is a dish I love. It's traditionally made with shredded skirt steak, and served over white rice and fried plantains.

I created this lighter version a few years ago using lean chicken breast instead, sometimes I even use boneless skinless thighs or a combination of both. I like to serve it with baked tostones (plantain chips) and a salad. Leftovers make a delicious burrito bowl (I love Chipotle!) served over brown Cilantro lime rice, Southwestern black bean salad, lettuce and shredded cheese.

Easy Crock Pot Chicken and Black Bean Taco Salad

Filling and delicious – under 300 calories!

This simple slow cooker chicken taco salad is high in fiber and protein which means it's very satisfying – all for under 300 calories. Trust me, you won't miss the tortillas!

I'm on a salad kick now that Spring has sprung. Last week I whipped this salad up for dinner, and it was so good and simple I knew I had to make it again to share. I basically added chicken breasts and black beans to the slow cooker, seasoning it with taco seasonings and topped it with salsa. Doesn't get easier than that! A few hours later I shredded the chicken and combined everything for this wonderful topping to this salad.

Filling and delicious – under 300 calories!

I also whipped up some of my favorite zesty avocado cilantro buttermilk dressing for the perfect salad that's so satisfying and super easy to make.  Try this for taco Tuesday!

Crock Pot Carne Guisada (Latin Beef Stew)


Slow cooked Latin beef stew with baby red potatoes and Latin seasonings. Serve this topped with fresh aji picante – it's is a must and really brightens the flavors and rounds out the dish!


Last week I was on a cruise to the Bahamas from New York having fun in the sun. I was hoping to return to Spring weather but so far March is starting off really cold in New York. This Latin beef stew is the perfect way to warm up and it's a favorite in my home. A bit different than traditional beef stew because the meat and potatoes simmer with light beer, scallions, garlic, tomatoes, cumin, achiote (also known as annato) and spices. If you can't find achiote which is traditionally used in Latin cuisine and can be purchased at any Latin market or on Amazon, no worries, you can use Badia Sazon or even sweet paprika instead. If you prefer to make this without beer, you can replace it with water, it will still taste great.

Slow Cooker French Dip Sandwiches with Caramelized Onions


If the thought of a hot sandwich filled with beef,  melted cheese, caramelized onions and peppers served with beef broth for dipping sound appealing, you NEED to make these!


These sandwiches make the perfect game day meal, start this early in the morning because you'll need 9 to 12 hours, depending on the size of your roast. You can even serve them as sliders by serving them on dinner rolls.


Ever since I got my hands on the The Recipe Girl Cookbook: Dishing Out the Best Recipes for Entertaining and Every Day, I've had my eye on this recipe because I love a good French Dip! To be honest, I've never made roast beef in the slow cooker, because I love my roast beef in the oven, cooked to medium rare. But I took a chance because I was curious and made this yesterday. Smelled so good simmering all day and when it was ready I made myself a sandwich… it was awesome!


My husband came home from work hungry and I made him a sandwich, and he LOVED it! I didn't have to do much to her recipe to make it light, I just used whole grain bread (tried with both whole wheat baguette and whole wheat 100 calorie potato rolls) and I used portion control and they were perfectly satisfying. I highly recommend making the onions and peppers, in my opinion they make the sandwich!

I've known Lori (aka Recipe Girl) for quite a few years, we first met on Twitter, then in person a few times and recently spent a weekend away at the Better Blog Retreat in Park City, Utah along with a few other lovely ladies. Lori is pictured on my left.


The recipes in her book are perfect for entertaining and she includes menu ideas from everything from football parties, romantic dinners for two, holiday parties, tailgating parties and more, or you can just serve them up any night of the week.

Because this can make several servings depending on the size of the roast you purchase, and the appetites of your guests I am leaving out the serving size and calculating the nutrition based on one sandwich using a whole wheat baguette.

Crock Pot Balsamic Pork Roast

Crock Pot Balsamic Pork Roast – An easy pork dish in a tangy balsamic sauce.

I love making pork in the slow cooker, it's so easy and literally falls apart once cooked. Here it's cooked with balsamic and honey which gives it a slight tang that I thought was lovely.

Whenever I happen to see a small pork roast in the supermarket, I always pick one up because I know it's an easy dinner. I usually find myself gravitating to the Slow Cooker Kalua Pork each and every time because it's so good and easy to make, but I wanted to switch things up and came across a slow cooker recipe for this balsamic pork recipe on Add A Pinch.

I met Robin just a few months ago while I was in Oregon so I was happy to try one of her recipes. This was so easy to make, and although my husband generally isn't much of a balsamic fan, my toddler and I thought it was great! This recipe is slightly modified from her original but for the most part I followed it pretty close.

I served this with Broccoli and Cheese Twice Baked Potatoes but this would also be great with Roasted Parmesan Green Beans.

Slow Cooker Garlic Sweet Potato Mash


These savory sweet potatoes are the perfect addition to your turkey dinner – let your slow cooker help you out in the kitchen this Thanksgiving!

I've adapted my sweet potato mashed potato recipe for the slow cooker, as another option for you this Thanksgiving Day. The slow cooker is a great appliance to use on those days you have a lot to cook, and not enough room on your stove and this sweet potato recipe couldn't be easier to adapt for the slow cooker.

I've also done this with maple, I just skipped the garlic and added 1 1/2 tsp pure maple syrup instead for a sweeter version. Enjoy!

Embarrassingly Easy Crock Pot Salsa Chicken Thighs

EASY 2 ingredient crock pot chicken

This is the EASIEST slow cooker recipe EVER! Just TWO ingredients: salsa and chicken plus some spices makes a delicious juicy chicken that can be used in tacos, over rice, over salad and more!

After coming back from a long weekend away in Park City, Utah and no real plans for dinner, I was desperate for something quick and easy. Scouring my fridge and pantry I had some boneless skinless chicken thighs and some chunky salsa, so I threw them in my crock pot along with some spices and crossed my fingers.


What emerged was a delicious, juicy chicken which shredded wonderfully after a few hours of slow simmering – and bonus my husband and daughter enjoyed it!

Last night we had them as tacos with all the fixins, and for my youngest, I served hers over rice. Today I was in the mood for a salad bowl like I often get at Chipotles and simply added some tomatoes, corn, shredded cheese and avocado and it was wonderful. This filling can be used so many ways, and it's too easy not to try. If you make it with chicken breast, you can reduce the cook time to about 2 to 3 hours on low. Use it however you like, tacos, salad, enchilada filling, anything I haven't thought of please share!

Crock Pot Kid-Friendly Turkey Chili


This one's just for the kiddos (or picky family members)! A mild, kid-friendly chili is made with ground turkey, corn, bell pepper, tomatoes and spices. Top it with your favorite toppings, and serve it with some chips on the side for the perfect, back to school lunch.

My youngest daughter is heading to school next week (Pre-K) and this year she'll be bringing lunch to class for the first time. She doesn't eat sandwiches (neither did my oldest), so I'm going to have to get pretty creative to make sure she's still eating healthy balanced meals. I just ordered this Foogo Stainless steal leak-proof thermos from Amazon, which I also did with my oldest daughter and I'll be filling it with some of her favorite warm meals.

Now I love me some chili, and I'm super excited for the colder weather to make some of my faves like Crock Pot Chicken Taco Chili, Turkey White Bean Pumpkin Chili, and Turkey Chili Taco Soup, but for my little one who doesn't like beans... or spicy food, this recipe is perfect (it's also gluten-free). It's super easy to make, I did it in the crock pot, but you can also simmer it on the stove. It makes 5 adult size servings, and you can easily double the recipes and freeze it for future freezer-friendly meals.

Crock Pot Creamy Tomato Soup


This creamy, rich tasting tomato soup is made in the slow cooker, with tomatoes, herbs, milk and Pecorino Romano cheese, plus the cheese rind for an added flavor boost.

Last night for dinner, we had a big bowl of this soup with some grilled garlic bread and a simple garden salad. For lunch, I usually like to have a small cup with a half sandwich (whole wheat grilled cheese – yum!).


Thanks to my parents, I'm real picky when it comes to soup. I grew up in home where we had homemade soup practically every night. Almost always dinner usually started a meal with a bowl of soup (not something I was always happy about as a kid) but I always loved when mom made her tomato soup.

Her recipes are usually more labor intensive than mine, I much prefer quick and easy. This slow cooked tomato soup, comes pretty close to her original, without all the extra work.  I always cook my vegetables on the stove, I think it gives you the best tasting results. You can do this the night before to save time in the morning. What really makes the soup over the top in my opinion, is the cheese rind (you toss it after the soup is done). I always freeze them after I use up my cheese, just to make soups, but don't worry if you don't have one the soup will still turn out fine.

You can also make this on the stove top: just simmer it in a big pot on low for about 1 1/ 2- 2 hours. If you want to use fresh garden plum tomatoes, as I often do in the summer when I need to use them up, I just blanch them in a big pot of boiling water until the skins crack, then remove them and peel the skins off.

This soup freezes well, so don't worry if this makes too much, you can make it and freeze it in small containers for quick meals on busy weeknights.

Easiest Crock Pot Salsa Verde Chicken


Chicken tenders are simmered in salsa verde with cumin and spices for the easiest chicken ever!

Cinco De Mayo is right around the corner, which always gets me excited, I LOVE Mexican food! While I was shopping at Target the other day, I picked up a jar of Archer Farm's Roasted Salsa Verde with no real plans on what to do with it.


My slow cooker is always sitting on my counter staring at me, so I figured let's see what happens when you cook chicken with salsa verde.

Two hours later, what emerged was a delicious aroma and tender chicken. That night I made chicken tostadas for dinner, but I know this would be wonderful so many ways; over rice, in tacos, as a filling for enchiladas, whatever! Tomorrow I am posting my chicken verde tostada recipe, but for today I'm just posting the chicken so you can use it any way you wish.

Crock Pot Turkey Breast with Gravy


Juicy slow cooked turkey breast with rich turkey gravy, all in your crock pot. This was my first time making a turkey breast in the crock pot, but it won't be my last!

What an easy way to prepare turkey breast that doesn't require too much attention. The vegetables are first browned with a roux on the stove to ensure the gravy has a rich flavor base, then it's all slow cooked in the crock pot. At the end, I simmered the braising liquid on the stove until it reduced and thickened into a delicious, easy gravy.


I modified this recipe from the Slow Cooker Revolution cookbook. It's a great base, and I can see playing around with the ingredients in this recipe.

Madison, my toddler said yummy juicy meat (that meant she liked it) and my husband was thrilled there were mashed potatoes AND gravy on his plate. This was like a mini Thanksgiving feast, I made some skinny mashed potatoes on the side, (you could also make cauliflower mash if you want to go low carb) and I also served this with some sauteed broccolini which is not pictured.

Pork roast, marinated overnight with fresh citrus juice, garlic, and jerk seasoning, then slow cooked all day while you're away. Topped with a bright, fresh Caribbean salsa of fresh mangos, avocado and cilantro. If I told you how good this dish was, would you believe me?

It comes in mild and hot, so being the wimp that I am, I went with mild. I served this over brown rice with some cucumbers on the side for a complete meal.

Since a lot of you ask, I have the Hamilton Beach Set It and Forget It Slow Cooker, I've had nothing but great results since purchasing it if you're in the market for a slow cooker. I've had really bad results with other slow cookers, so they are not all created equal!

Crock Pot Picante Chicken and Black Bean Soup


If you love a slow cooker recipe that requires no pre-cooking, then you'll love this spicy black bean soup. Spicy black bean and chicken soup with tomatoes, chiles, peppers and spices is delicious served with cool avocado and a touch of sour cream. Top it with cilantro for freshness and your taste buds will want to do a mariachi dance.

This month I asked my facebook fans what kind of recipes they wanted to see more of in 2013 and Slow Cooker recipes topped the charts! Second place was main dish meals, so I've been keeping my slow cooker on my counter and have been keeping my promise!


I must confess, it's harder to develop recipes in the crock pot. First, I have to wait at least 4 hours to find out if it's even good and second, not everything works out as imagined. Take this recipe for example, first attempt went right in the trash. Not the first time I dumped a crock pot creation in the trash but one things for sure, they all had onions in the recipe.

I first made this with sauteed onions and there is no doubt in my mind it ruined the soup. Something about onions and crock pots just don't work together, and this is not the first time. Second attempt I did everything the same but replaced the onions with onion powder and it was perfect, delicious, even. Even better for all of you because there's no pre-cooking anything, so it's easy!

This makes a nice amount of soup, perfect for freezing and reheating for a second night, or for lunch on the go. I love this topped with avocado and sour cream to mellow the heat, but it would also be great with a little cheese on top why not!

It's mildly spicy, not over the top. If you want it milder you can leave the ancho chile powder out. I pureed one of the cans of beans to thicken the soup, and left the second can whole for texture. Next time I may even add some sweet corn! A filling, wholesome, high-fiber meal for only 300 calories, or Weight Watchers 6 points plus. Freezer friendly, and gluten-free.
